Steps to make Smokey Bacon Jalepeño Bombs:
- Thaw turkey sausage - while thawing, dice up the onion and clean the jalepeños.
- Remove stems & seeds from jalepeños and slice them lengthwise ("hotdog style").
- Once sausage is thawed, add onions, garlic, onion powder, dry Ranch powder and sausage in a pan and brown.
- When the sausage is almost done, add in liquid smoke, cream cheese and cheese cubes, and as many of the seeds as you like. Turn heat to low and allow cheeses to melt.
- Remove from heat and allow to cool, about 10 minutes.
- Once cooled, transfer the mixture to a bowl and add in the shredded cheese. *This cheese was not melted along with the others for consistency reasons; you don't want too much "stringy" cheese right off the bat. This cheese will melt once the bombs are grilled, providing a fresh & rich flavor.
- Stuff the peppers full of the mixture and then wrap with 1 to 2 slices of turkey (or regular) bacon, and secure with a toothpick if needed.
- You can grill these (which is what I did), or you can even bake them in the oven. Leave them to grill or bake for about 20 minutes or until they look bubbly & the bacon is done.
