- Add diced pancetta and cook until golden brown
- Add diced celery, diced onion, diced carrot,garlic and thyme to pancetta and cook until veg are tender (about 10 mins) salt and pepper to taste.
- While cooking pancetta and veg, decase the chorezo and dice small. After veg and pancetta are done cooking add diced chorezo and cook 5 mins.
- Take off heat and let cool while to prep your mushrooms. Take stems off of mush and clean with damp papertowel.
- Add cream cheese to pancetta, chorizo and veg mixture and mix until combined (taste for seasoning at this point and salt and pepper to taste).
- Preheat oven to 400° and begin stuffing your mushrooms.
- Once mushrooms are stuffed add to the 400° oven and cook for 20-25 mins.
- Take out of oven let cool for 5-10 mins then enjoy!
Smear mixture into the cavity of each mushroom, creating a sizable mound over the top. Allow to cool at least ten minutes before serving; the stuffed mushrooms taste better when not piping hot. Store leftover cooked stuffed mushrooms in a shallow, air-tight container, in the refrigerator. To reheat, you can use a microwave to reheat the mushrooms for a few seconds. They don't taste as good as fresh from the oven but still quite enjoyable.
