  1. Get 1/4 kg Carrot
  2. Get 1 tablespoon Oil
  3. Get 1 teaspoon Mustard seeds (raie)
  4. Make ready 1 teaspoon Urad Dal
  5. Take 1 teaspoon Bengal gram
  6. Get 2-3 Red Chilli
  7. Make ready 1 string Curry leaves
  8. Make ready 2 tsp corinader leaves
  9. Make ready 1 tablespoon Grated Coconut

Add the lemon juice and brown sugar. Toss carrots with olive oil, curry powder and salt directly on baking sheet until evenly coated. Toss roasted carrots with honey directly on baking sheet. Taste and add more salt, pepper or honey if desired.

Instructions to make Carrot curry:
  1. Heat 2 tea spoons of oil in a kadai and temper with mustard, urad dal, bengal gram, red chilli and curry leaves
  2. Add finely chopped carrots to the kadai
  3. Cook them for 3-5 minutes
  4. Add 1/4 cup water and boil the carrot
  5. Once the water is absorbed and carrots are cooked, add salt
  6. Add grated coconut and mix well
  7. Add coriander leaves and serve hot along with rice
