Steps to make Mushroom curry:
  1. Make sure you keep the ingredients ready before you start, refer the picture for the count of mushrooms and size of tomato and onion
  2. Cleaning method for Mushrooms - soak the mushrooms in lukewarm water filled with rock salt, Use your hand for cleaning the mushrooms, by rubbing the dirty parts, refer the image for cleaned mushrooms
  3. In a pad, heat a tablespoon oil, followed by a teaspoon of mustard seeds and cumin seeds, allow them to splutter
  4. Now add the finely chopped onions, garlic pods and curry leaves, followed by sliced ginger, Give a quick stir to the entire mix
  5. Once the onions become transparent add the chopped tomatoes, let the tomatoes get cooked well
  6. Meanwhile you can cut the mushrooms into pieces and add to the tomato mix
  7. Add the a table spoon of spice powders, chilli powder, coriander powder, curry powder, salt and 1/2 tablespoon turmeric powder and mix well
  8. Now add the required water, mushrooms by nature,release water, so add accordingly and cook the curry in low flame
  9. Finally add chopped coriander and a tablespoon of coconut oil, serve hot with rice or roti
  10. When you increase a water level, it becomes a thick gravy (first and second pic) and when you decrease the water it become dry curry (third pic)
