  1. Prepare 3 Potatoes
  2. Get 1 Onions

This potato curry goes very well with chapati, phulka, roti, plain rice, pulao or dosa. Indian cuisine is diverse and many dishes are prepared in different regional styles.

Steps to make Aloo curry:
  1. Chop potato into small cubes and soak them in water.
  2. Take oil. Add mustard, jeera, bayleaf, dried red chilli. When it starts to splitter add ginger garlic and green chillies. (Skip green chillies and add more chilli powder if you want Maharashtrian style).
  3. Add onions. Add salt. Add tomatoes.
  4. Add chilli powder, turmeric, dhania powder and saunf. Hing.
  5. Garam masala is optional. (Tastes good without it too)
  6. Cook well until tomatoes become mushy. Then add potatoes and saute it for 3 mins.
  7. Add enough water and let it boil for 15-20 minutes till soft.
  8. Top it with chopped coriander or kasuri methi.

Step five - Your easy canned potato curry is ready when the sauce has thickened and turned golden yellow, and the potatoes are soft. Curries are nearly always better made in advance and reheated. This easy aloo curry is delicious freshly cooked, but the flavours become deeper the longer you leave it. Simple Aloo Curry, as the name says, is an easy to make tomato based Indian curry and relished by vegetarians for its tangy taste. It is more of a comfort dish.
