  16. Take 1 string curry leaves

As it turns out, learning how to make curry at home is not only easy, it's so easy to pull off that it's become my go-to weeknight meal. It only requires one pot, and the prep is super minimal. This simple compote is a great accompaniment to roasted lamb or beef. We live in Flathead cherry country so that's what I use, but any sweet dark cherry will work.

Instructions to make Cherry Curry:
  1. Boil the cherry with the pre soaked moong dal and a pinch of turmeric powder until done.
  2. Grind together the shredded coconut with 2 cloves of garlic, cumin seeds, turmeric powder and chilli powder.
  3. Add this ground paste to the dal cherry mixture and cook well till it boils.
  4. Once cooked..check the seasoning. Add enough salt.
  5. Once it is seasoned well give it a good thadka.
  6. For thadka. Heat the pan..add enough coconut oil.splutter the mustard and fenugreek seeds. Add the shallots and 2 cloves of chopped garlic. Now the red chillies and the curry leaves. Stir it nicely and pour it over the curry prepared and give it good stir.

If using frozen cherries, it usually isn't necessary to add the water. Layer the flavors for best results - don't dump in all the ingredients at once. Soften the onions and garlic and ginger first before adding the spices. This lets different flavors grow and strengthen. Chickpea Curry is a meatless main that completely satisfies!
