Add the curry powder, paprika, cayenne, cumin, allspice, ginger, salt, and pepper. You can pretty much use what ever you have in hand and yet make this dish delicious. Potato is a versatile veggie and just goes so well in any dish. This potato curry is one of our favorites at home.
Steps to make Potato curry:
- Boil potatoes for 10 minutes on low flame in pressure cooker
- Cut onions. The potatoes and onions must be in 1:1 ratio. Make ginger-garlic paste.
- Heat two tbsps oil.
- Add cumin, mustard seeds, red chilli.
- Add onions.
- Add curry leaf, turmeric, and salt (half of what you expect to put in it or around 1/2 tbsp). Mix well. Cook until onions brown. Stir occasionally, but gently so as not to crush the potatoes.
- Cut potatoes into even sized pieces.
- Add potatoes. Cook for 3-4 minutes.
- Add ginger-garlic paste. Cook for a minute.
- Add salt (around 1/2 tbsp). Cook with lid closed for 5 minutes. Stir occasionally.
- Add chilli powder and dhaniya powder. Cook for 5 minutes.
- Cut coriander. Taste the curry to check for salt and spice.
- Add coriander. Cook for 2 minutes. Serve with rice or flatbread.
Heat oil in the pot over medium-high heat. Cook the potato curry on a low to medium heat setting. Potatoes are root-based starches that thicken up and soften up more easily when cooked on low heat. Therefore, when you cook the curry on low heat, not only till it cook all the way through and become soft, it will also make the curry thick and the right consistency.
