  1. Take 1/4 kg liver
  2. Take Maize flour
  3. Make ready Onion

  7. Prepare Cayanne/pepper - optional
  8. Get Soy sause - optional
  9. Prepare Water

I had missed maini (liver) for quite some time.and I had to make it spicy to savor the tasty aroma #themechallenge Fazila. Kachumbari is the Swahili name for fresh Tomato and Onion Salad, the basic ingredients here are tomatoes and onions, and the rest is up to the cook.

Instructions to make Ugali, liver and Kachumbari:
  1. Ugali: Add water to a cooking pot till it boils. Add maize flour and begin ro stir briskyly till the mixture thickens and develops a firm texture
  2. Liver: Add liver to a cooking pot, add 1/8 glass of water, some salt and let boil till the water dries up. Add finely chopped onions and some cooking oil then cover for 1- 2mins till the onion softens and becomes translucent. Add finely chopped tomatotes and pilipili hoho. At this stage, add spices of your choice including soy sauce to add the brown color. Stir and leave to steam for about 3-5mins then serve.
  3. Kachumbari: Mix finely chopped onions and tomatoes then add salt to taste

You can slice it, diced it, chop it, blend it … what ever rocks your boat. I have tried it several ways and they all work. For the cassava ugali (kindly refer to my cassava ugali recipe), Greens (I did a mixture of the green vegetables):, Sukuma wiki, Pumpkin vegetables, Managu, Kunde, Spinach, chopped onions Shixshii Ugali, steamed greens, beef stew Nyama Choma is roasted meat; either cow, goat or sheep meat.
